Declaration of Arbroath, 1320, because it made some statements about the status of kingship.

The Reformation is also highly significant, as is the demise of the Gaidhlig language, but it is hard to pin these down to particular years.

You can also include the Roman withdrawal (pre-Scotland of course), and invasions of Gaels and Norse.
